Challenge-Day 2

Somebody you've been closest to the longest...

My sister and I have been friends since I can remember, sure we have had our ups and downs but what sisters don't. We've played house, mermaids, school, and barbies together. We enjoyed good ol' karaoke and fashion shows with our dress up clothes. As we got older we enjoyed youth group together as well as being fellow cheerleaders. Now that we are adults our relationship has totally changed but I love that although we may not talk all the time we can always pick up right where we left off!!






 Carter chose his brother Clayton who I'm sure have spent many hours together wrestling around and breaking things.

Blog Challenge- Day 1

Day 01 - A picture of yourself with fifteen facts.




1. I apparently don't have very many pictures of myself by myself so this one will have to do.
2. I like my job but don't like working.
3. I am a homebody.
4. I love reading as my "escape".
5. We watch more TV than anything and I don't feel too guilty about it.
6. I used to dream about living by the ocean. Now that I live 15 minutes from it I rarely visit it. Maybe it's because it is a cold ocean?
7. I am a closet "The Sims" player. Don't judge me k!
8. I miss coffee but the smell of it makes me feel not so hot.
9. I love to sleep!!!!!!!!!!!!!!

11. If we have a little girl she is so totally going to rock the huge head bows!

Pig Pickin' Cake

Lately I have been really wanting a Pig Pickin' Cake. Now if you've never heard of this before you are probably thinking that it sounds disgusting. However, it is not. It was one of my favorites growing up and frequently requested for birthdays and in particular my high school graduation if I remember correctly but I only know of the one bakery in yuba city that makes it. Right about now I would give an arm and a leg to have a piece of this deliciousness *hint hint (baby shower) hint hint*

Anyways, I went to the pioneer woman website today for the first time in a while and saw that one of her featured recipes was a "pig cake" so I thought I would click on it and see what I thought. Low and behold it is a at home version of the Pig Pickin' Cake that will just have to tide me over, but I'm super excited there is a recipe out there for it. You better believe I will be making this in the next couple of weeks!!

Ingredients


■FOR THE CAKE:

■1 box (18.25 Oz. Box) Yellow Cake Mix

■1 stick Margarine (softened)

■1 can (14 Oz. Can) Mandarin Oranges, Drained, 1/2 Cup Juice Reserved

■4 whole Eggs

■1 teaspoon Vanilla Extract

■FOR THE TOPPING:

■1 package (4 Oz. Box) Vanilla Instant Pudding Mix

■1 can (20 Oz. Can) Crushed Pineapple, Juice Reserved

■½ cups Powdered Sugar

■4 ounces, fluid Frozen Whipped Topping (such As Cool Whip)

■Extra Mandarin Orange Slices, For Garnish

Preparation Instructions

Preheat oven to 350 degrees. For the cake, combine cake mix, margarine, 1/2 cup juice from the mandarin oranges, eggs, and vanilla. Beat for four minutes on medium-high. Add drained oranges and beat again until pieces are broken up and small. Pour batter into greased and floured 9 x 13 inch baking pan and bake for 25 to 30 minutes, or until golden brown and set. Remove from oven and cool completely. If desired, turn out cake onto a large platter.

Once cake is cool, blend juice from drained pineapples with the vanilla pudding mix. Add powdered sugar and mix, then mix in whipped topping. Stir in drained pineapple. Spread on cooled cake and refrigerate several hours.
To serve, cut cake into squares and top each square with a mandarin orange slice.

Sanctus Real

Last Saturday we got to go to a Sanctus Real concert which was great because they are a pretty well known Christian band and they came to our town!!! Our local Christian Radio station partnered with some local businesses to bring them to our town which is huge because normally we would have travel to Eugene a little over 2 hours away to experience entertainment that isn't local bands or theatre.

Anyways, it was fun and I enjoyed singing along to many of their different songs I love and listening to others.

Below is a clip from my favorite Christian song currently and it was ever better live and hearing the story that is associated with it. The name of the song is "Lead me" and I love the message of it!!
